नमक को मुख्य रूप से 4 मूल प्रकारों में विभाजित किया गया है
टेबल साल्ट(Table Salt)
समुद्री साल्ट(Sea Salt )
कोषेरसाल्ट(Kosher Salt )
सेंधानमक/रॉक साल्ट(Sendha Namak /Rock Salt)
इनमें टेबल नमक, हिमालयी गुलाबी नमक, कोषेर नमक, समुद्री नमक और सेल्टिक नमक शामिल हैं, येन केवल वे स्वाद और बनावट में भिन्न हैं, बल्कि खनिज और सोडियम सामग्री में भी हैं।
1.टेबल साल्ट (Table Salt ) :
इस नमक में सोडियम क्लोराइड की मात्रा लगभग 97-99% होती है| इसको बनाने की प्रक्रिया समुंद्री नमक के जैसी ही है परन्तु दोनों में अंतर इतना है की इसमें से शुधिक्र्ण के समय कैल्शियम, मैग्नीशियम, तांबा, लोहा, पोटेशियम, सल्फर आदि जैसे खनिजों को हटा दिया जाता है|
यह रिफाइंड नमक होता है और इस नमक में विभिन्न स्वास्थ्य समस्याओं के समाधान के लिए अतिरिक्त पोषक तत्वों को मिलाया भी जाता है |
जैसे आयोडीन जब नमक में जोड़ा जाता है तो इसे आयोडीन युक्त नमक कहा जाता है जिसका उपयोग थायरॉयड ग्रंथि की गड़बड़ी को ठीक करने के लिए किया जाता है।
विशेष रूप से बच्चों में आयोडीन की कमी से थायरॉयड ग्रंथि से हाइपोथायरायडिज्म नामक थायरॉक्सीन हार्मोन का उत्पादन कम हो जाता है।
पर्याप्त आयोडीन प्राप्त करने के लिए, थायरॉयड ग्रंथि आकार में बढ़ने लगती है जिसे गोइटर कहा जाता है।आयोडीन की कमी से मानसिक बीमारी हो सकती है
जब आयरन को आयोडीन के साथ नमक में मिलाया जाता है, तो इसे डबल फोर्टिफाइड नमक कहा जाता है। और यह एनीमिया रोग में मदद करता है |
कभी-कभी नमक में फोलिक एसिड भी मिलाया जाता है, जो विशेष रूप से गर्भवती महिलाओं के लिए न्यूरल ट्यूब दोष और एनीमिया को रोकने में फायदेमंद होता है
2.समुद्री साल्ट या काला नमक (Sea Salt /Black Salt ):
समुद्री नमक या काला नमक – समुद्र के पानी को वाष्पित करके बनाया जाता है और इसे भारी मात्रा में टेबल साल्ट की तरह रिफाइन नहीं किया जाता |इसमें कैल्शियम, मैग्नीशियम, तांबा, लोहा, पोटेशियम, सल्फर आदि जैसे खनिज होते हैं,परन्तु बहुत कम मात्रा में |
जिन्हें आमतौर पर टेबल नमक में शोधन प्रक्रिया के दौरान हटा दिया जाता है। यह अलग-अलग बनावट का हो सकता है जैसे महीन या मोटा और रंग जैसे गुलाबी, काला, ग्रे आदि। इसमें एक अनोखा मिट्टी का स्वाद होता है जो आसानी से अलग हो जाता है।
भारत में काला नमक (समुद्री नमक का एक प्रकार) विशेष रूप से पाचन समस्याओं को ठीक करने के अपने गुण के कारण घरों में व्यापक रूप से उपयोग किया जाता है और चिकित्सीय गुणों के लिए जाना जाता है।
लेकिन ऐसा नही है की इसको ऐसे ही इस्तेमाल कर लिया जाए इसे भी शुद्ध करना होगा क्योंकि समुद्र में आमतौर पर शरीर को नुकशान पहुचाने वाले भारी धातुओं और अन्य प्रदूषकों की मौजूदगी हो सकती है।
3.कोषेर नमक (Kosher Salt):
कोषेर नमक क्या है: कोशर नमक एक प्राकृतिक रूप से पाया जाने वाला खनिज है|कोषेर नमक में आयोडीन नही होता |इस नमक में सोडियम क्लोराइड होता है |कुछ परिस्थितियों में इसमें एंटी-क्लंपिंग तत्व भी हो सकते हैं।
कोषेर नमक का उपयोग :नमक का उपयोग खाद्य पदार्थों के स्वाद को बढ़ाने के बजाय उन्हें नमकीन बनाने के लिए और मांस को पकाने से पहले उस पर लगे खून को साफ़ करने के लिए भी कोषेर नमक का उपयोग किया जाता है ।
कोषेर नमक में आयोडीन नहीं होता है, कोषर नमक बहुत कम रिफाइन किया जाता है| यह जल्दी घुलने वाला होता है |यह मोटे-मोटे दानों में होता है यह टेबल नमक से लगभग 20% अधिक महंगा है|
4.सेंधानमक/रॉक साल्ट:(What Is Rock Salt)
सेंधा नमक को आयुर्वेद में सब नमकों में सबसे अच्छा माना गया है | सेंधा नमक को हैलीट नमक ,लाहौरी नमक ,उपवास नमक या रॉक साल्ट के नाम से भी जाना जाता है।
यह सोडियम क्लोराइड का प्राकृतिक रूप है और एक प्रकार का नमक है। सेंधा नमक आमतौर पर आइसोमेट्रिक क्रिस्टल बनाता है और आमतौर पर सफेद या बेरंग होता है|
सेंधा नमक में 94 सूक्ष्म पोषक तत्व (Micronutrients) और लोहा, जस्ता, निकल, कोबाल्ट, मैंगनीज और तांबा जैसे खनिज भी होते हैं| परन्तु इनकी मात्रा बहुत ही सूक्ष्म होती है, जो हमारे शरीर की आवश्यकता पूरा नही कर सकते |
सेंधा नमक के इन फायदों के बारे में बताया जाता है : हाइपोथायरायडिज्म से बचने के लिए ,पेट की जलन को कम करने के लिए ,वजन को कम करने में ,त्वचा के लिए , साँस की बीमारी दूर करने के लियें , पाचन की गडबडी को दूर करने के लिए के लिए ,अच्छी नींद लेने के लिए ,पेट के कीड़ों को मारने के लिए भी सेंधा नमक का उपयोग किया जाता है
5.हिमालयन गुलाबी नमक (Himalayan Pink Salt In Hindi ):
विशेष रूप से हिमालयन गुलाबी नमक सेंधा नमक का ही एक रूप है जोकि पाकिस्तान के पंजाब के झेलम जिले के खेवरा में खैरा नमक खदान से आता है, और लोहे के आक्साइड की उपस्थिति के कारण इसका रंग गुलाबी होता है। इसमें कैल्शियम, लोहा, पोटेशियम और मैग्नीशियम की भी थोड़ी मात्रा होती है, इसमें टेबल साल्ट की तुलना में सोडियम में थोड़ा कम होता है।
आयुर्वेद में सेंधा नमक को शरीर के लिए बहुत ही लाभदायक बताया गया है |

Step 3 – After filling the Online Application Form & Processing Fee Payment, you will get a Registration Confirmation Acknowledgment on your registered E-mail ID with Hall Ticket Number (Only Hall Ticket Number) from AICTSD within 48 Hrs.

Step 4 – You have to appear for an Online Exam whose schedule is given in the table above.

Step 5 – Final Result will be declared as per the schedule provided in the table above.
